John Tobin, Teagasc Food Research Centre, Ireland
Prof John Tobin is the Head of the Food Chemistry & Technology Department located at the Teagasc Food Research Centres in Moorepark and Ashtown. Prof Tobin’s research focuses on dairy chemistry and the impact of cow level factors (diet/genetics/seasonality) on the functional, nutritional and processing characteristics of milk and dairy-based ingredients. Prof Tobin’s research interests also span aspects of dairy processing including thermal, separation and concentration processes, linking the chemistry of milk components to their behaviour in the process to better understand subsequent impacts on efficiency of conversion of milk into functional dairy products.
